There will be three teams of four and each time must make a traditional Gautemalan cuisine of Tamales colorados (red tamales), Tamales negros (black tamles), and Tamales de elote (sweet corn tamales). Each team will be required to be a chef for a restaruant called Antojitos Guatemaltecos. For each team they will be required to make 100 tamales of each kind (total of 300 tamales) for the celebration and procession of Virgin Mary on the Lake festival which is on May 3rd. Each team will have a elderly mentor to share the recipes of the Guatemalians that have been passed down for decades. Each team along with a mentor will have at least 3 hours to make 300 tamales. The first team to create all of the tamales will gain a point but the other point will be rewarded to the team whose tamales have the traditional tasting sensation of the delicious tamales. Whenever these two challenges have been completed they will be moved onto the next challenge.
